Breakfast pastries are one of my love languages…..to myself and my girls. To me there is nothing more inviting on a weekend morning than the smell of freshly brewed coffee and something sweet in the oven. While the cozy factor has its place in my heart, my kids are much more interested in if they taste good. Luckily, these muffins hit both marks. Here is my recipe for a no fuss, kiddo-approved, banana chocolate chip muffin.

  • 2 very ripe bananas mashed
  • 1 egg
  • 1/3 cup melted coconut oil (or avocado oil)
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/2 cup chocolate chips
  • Preheat oven to 350 degrees
  • In a large bowl, combine all ingredients except the chocolate chips. Mix until combined.
  • Fold in chocolate chips
  • Add to greased muffin pan
  • Bake for 25 minutes
